Bacon and Egg Cups
These are super easy to make and look much fancier than they actually are. They also don't use bread, so they're gluten free too (make sure you use GF bacon). Best of all, they're a great use off the fresh eggs we get from our hens at home.
6 eggs
Spray-on Rice Bran oil
Muffin tray (makes 6)
Simple GF Bacon and Egg Cups
Ingredients:
6 strips of streaky bacon (don't cut these)6 eggs
Spray-on Rice Bran oil
Equipment:
Frying PanMuffin tray (makes 6)
Instructions:
- Spray the muffin tray with spray-on oil
- Fry the bacon until it is fully cooked and has a bit of colour, but is still soft
- Preheat oven to maximum
- circle the bacon around the edges of the muffin mould to make a ring. It shouldn't sag into the middle, but it doesn't need to be perfect
- Crack a raw egg into each bacon-wrapped mould.
- Cook in the oven until egg whites are firm when you poke them with a pair of tongs
- Enjoy!
